What are Totchos?
Totchos, are nachos where tater tots stand in for the tortilla chips. Totchos are what you get when you blend two tailgating staples together. Ditch the tortilla chips for crispy tater tots and layer in pulled pork with your favorite nacho fixings.
The beauty of this quick-fix recipe is that the tater tots can be baked or air fried, and when; it comes to toppings, there are no rules! Our favorite way to make totchos is with smoked pulled pork, shredded sharp cheddar cheese, black beans, drizzled in bbq sauce, and fresh veggies.
We first tasted Totchos years ago at a restaurant in a place in the Mid-West! Gathered around a table with mugs of brew, we experienced the magic of totchos: crispy fried potatoes topped with black beans, avocado mash, and a white queso sauce. The result was our new favorite dinner and an appetizer we could serve to any size crowd. This is the moment we agreed to do this at home and experiment with a variety of different toppings.
Fair warning: Nachos are traditionally finger food, totchos require a fork. And you may even want to consider a spork once you get a taste of this delicious amalgam of flavors.
Our Pulled Pork Totchos Recipe
Ingredients
2 lbs Pork Shoulder. ( Smoking Your Own Pork Butt Recipe or buy your favorite on the way home)
1 x 32-ounce bag frozen tater tots
1 x 28-ounce can baked beans
2 tablespoons Knuckle Dragger Seasoning
1 1/2 cups BBQ sauce
1/2 cup sour cream
1 /2 cup chopped onion as garnish
How to make pulled pork totchos.
Once the meat is cooked through, remove it, and measure out approxiametely two cups.
Cook the tots according to the bags directions, and don’t forget to spray the large baking sheet with nonstick cooking spray. Cook until crispy.
Once your tots are cooked, remove from the oven and season the tots with Knuckle Dragger Seasoning. Then dress the tots with meat, baked beans and shredded cheese and return to the oven to bake for about 5-10 minutes or until cheese is melted.
Before serving, top with your favorite BBQ sauce, sour cream, and green onions.
