Cowboy Pork Chops are simply a pork version of what is commonly known as the Cowboy Cut Beef Ribeye Steak. The longer end of the rib bone has been frenched, which allows for a beautiful presentation on your plate.
If you’ve never tried a Cowboy Pork Chops (Tomahawk Pork Chops) before you will fall in love with this superior piece of meat, the tomahawk pork chop wins every award for juiciness and flavor. Although this is a specialty cut of meat and not every butcher will have them on hand, it never hurts to ask. Ask for a 1 1/2 to 2 inch bone-in center cut rib chop or loin chop.
Why Are Tomahawks Better Than Regular Pork Chops?
Leaving the bone in the meat adds great flavor, and conducts heat within the meat, allowing it to cooks more evenly. A little know fact about bone in meat, is that when the bone heats up, the marrow (which is rich in nutrients and great flavor) penetrates the meat, delivering mouth watering flavor. The bone truly helps prevent overcooked pork that is dry and extremely chewy.

Ingredients
4 center-cut pork rib chops (minimum 1 inch thick and 8 ounces each)
1 tablespoon Smoked Bros Light Strike
2 teaspoons Smoked Bros Nada Hombre
2 tablespoons oil (avocado or olive oil)
Salsa - Optional
Sour Cream - Optional
*Use an oil with a high flash point
How To Grill Cowboy Pork Chops
Prepare and marinate the pork chops. Pat pork chops dry with a paper towel to remove any excess moisture. Then brush them with avocado oil or olive oil lightly. Season with Light Strike, and Nada Hombre. Set aside for 20 - 30 minutes.
Prepare the grill. Heat up your gas grill to a temperature between 450 degrees F. Somewhere around 400F seems to work best, though the grill may fluctuate. Make sure the heat is stable before adding the pork chops. Remember, Too Much Time And Heat Equals Dry Meat.
Grill the pork chops. Because you lightly oiled the pork chops, there is no need to brush the grill grates with oil. Add seasoned pork chops to the hot grill over direct heat. Let the pork chops sear on each side for approximately 5 minutes to get a light char and crust. When you flip or rotate the pork chops ensure you rotate the meat 180 degrees before placing back down. The 180 degree rotation creates those perfect grill marks we all love. Grill the pork chop until the internal temperature is 145F.
Tent & Serve. Remove from the grill and add a piece of foil on top. Let the pork chops rest for 10 minutes before slicing and serving. For a little extra flavor you can add salsa and a little bit of sour cream.
